Virgin Voyages has been teasing a “delicious” announcement for the past couple of days, and the wait is finally over. The popular Razzle Dazzle venue on Brilliant Lady will soon be transformed to feature a brand-new menu inspired by the bold and delicious flavors of Spanish cuisine. This follows the success of the Lucky Lotus transformation on Scarlet Lady, where Razzle Dazzle was reimagined with an Asian-inspired menu that became an instant favorite.

At this time Razzle Dazzle will remain the same on Valiant Lady & Resilient Lady, however with Valiant Lady due in Dry Dock in May 2026 she will also likely gain a new concept at this time.

Renowned Chefs Collaborate with Virgin Voyages

Renowned chefs Justin Severino, a four-time James Beard Foundation award nominee, and Nate Hobart will lead Rojo by Razzle Dazzle, bringing their signature approach to ingredient-driven, sharable dining to sea. As co-chefs of Morcilla, a celebrated Spanish-style charcuteria in Pittsburgh, they’re bringing their passion for Spanish cuisine to Virgin Voyages. Their menu will feature some of their standout dishes, including Morcilla’s famed Oxtail Montadito—braised oxtail with caramelized onion, Mahón cheese, and a crisp crostini.

Rojo by Razzle Dazzle – New Spanish-Inspired Menu

Rojo by Razzle Dazzle offers a fresh take on modern Spanish-inspired cuisine, featuring bold flavors that capture the essence of Spain. The menu elevates classic dishes like croquettas, paella and tapas while introducing a variety of Spanish-inspired cocktails. No matter your destination, Rojo brings the vibrant tastes of Spain to your dining experience.

By day, Rojo by Razzle Dazzle will offer a Spanish twist on the beloved brunch experience, with dishes like jamón croquettes alongside familiar favorites such as acai bowls and frittatas. In the evening, the space transforms into a warm and inviting setting inspired by Spain’s communal dining traditions. Sailors can enjoy a curated selection of Spanish wines, refreshing sangrias, and artisanal vermouths, all complementing a menu designed for sharing.

Menu Changes Across the Fleet

The update to Razzle Dazzle on Brilliant Lady is just one part of a larger series of menu changes across the fleet. Virgin Voyages will also introduced new offerings at Extra Virgin and Gunbae. Extra Virgin now features unique dishes on each ship, giving guests the chance to experience different regional flavors of Italy, while Gunbae has been updated with exciting new Korean-inspired options.

Virgin Voyages has also promised “dozens of new menu items” on Brilliant Lady across all of the other restaurants.

Levi Mezick, Director of Culinary Program Development, said, “Virgin Voyages set out to be a disruptor from day one, and our culinary program – with Michelin-chef designed menus and boundary pushing creativity – was always central to that mission. Spanish cuisine and the communal dining traditions complement our commitment to authentic yet innovative experiences for our Sailors.”

Live Event to be Held in New York City

To unveil the new dining concept, Virgin Voyages will host a special event tonight at 6:30 PM ET at the Virgin Hotel in New York City, where invited press and First Mates will get a first look at the updated menus. The spotlight will be on Razzle Dazzle’s Spanish cuisine, but there will also be a sneak peek at the other updates across the fleet as well as an overview of recent announcements.
