The Test Kitchen on Virgin Voyages offers a fresh take on dining, blending creativity and culinary exploration. Inspired by the cookbook Ma Cuisine by Auguste Escoffier, this venue invites sailors to approach dining as an experiment, with a fixed seasonal tasting menu that highlights both flavor and technique.

Styled to resemble a science lab, The Test Kitchen’s decor complements its focus on education and experimentation. It’s a standout venue on the ship, known for its inventive approach to cuisine and unique dining concept.

The Test Kitchen Experience

The menu at The Test Kitchen stands out with its creative and inventive dishes, designed to impress both the eyes and the palate. This dining experience encourages sailors to explore unique flavor and texture combinations, offering a distinctive and engaging culinary journey.

Given that it’s a multi course menu, sailors should not feel obliged to finish or even enjoy everything. Some dishes may challenge your palate and that’s part of the fun.

The Test Kitchen Food Menus

There are three different menus that The Test Kitchen alternates between depending on the ship, itinerary and length of voyage.

Menu Rotations

There is no set rotation for the menus, and it varies across the fleet. However, Menu A & Menu C are typically the default options, switching halfway through your voyage. Menu B is offered on select longer voyages in an equal rotation. To get the most accurate schedule for your sailing, check with The Test Kitchen host on day one.

Menus

As the dishes are all-inclusive, don’t hesitate to ask for more of any dish that particularly delights you or to swap to the veggie/meat menu for a course. It’s an opportunity to savor the flavors and textures that make The Test Kitchen a unique dining experience.

Menu A

Menu A features a variety of non-vegetarian and vegetarian dishes, with the beef or venison tenderloin being the highlight, served with a rich chocolate sauce for added depth. Other non-vegetarian options include scallops with ham and an egg yolk with caviar. On the vegetarian side, the menu offers fresh choices like gazpacho, asparagus with hazelnuts, and a vegetable tart, along with coconut and strawberry for a light, sweet finish.

Menu B

Menu B offers a variety of non-vegetarian and vegetarian dishes, with the lamb rack standing out as a rich and flavorful option. Other non-vegetarian choices include salmon, shrimp, and a corn and truffle dish. For vegetarians, there are options like barley risotto, tofu, and beet with cashews, along with fresh dishes like tomato and olive and mango with chia.

Menu C

Menu C showcases a balance of non-vegetarian and vegetarian options, with the Study of Chicken as the standout dish, offering a unique take on poultry. The eel with soy and scallops with black garlic add rich, savory flavors, while the Yuzu and Meringue provide a light, refreshing finish. For vegetarians, options like eggplant with nori, vegetable papillote, and gnocchi with squash highlight fresh, plant-based ingredients, with coconut and berries rounding out the menu with a sweet, tropical touch.

The Test Kitchen Drinks Pairing & Menus

The Test Kitchen also offers an excellent value set of pairings including wine, cocktails, mocktails and beer, a great way to kickstart an evening. Sailors can use their on-board Bar Tab on this option, which is a fantastic use of it. The pairing adapts to each menu.

Overview

The Test Kitchen is ideal for anyone open to trying something different. While the concept might seem unfamiliar, a cruise is a great chance to explore new flavors, especially knowing you can always order something else if needed or even head to get pizza or burgers later!

This unique dining experience combines an innovative menu with a science-lab-inspired setting, offering a relaxed way to step outside your usual choices. Bring an open mind and enjoy the journey.

    For anyone who has tried the Test Kitchen, how long does it last? An hour? Longer?

      They recently went down to 5 courses which speeds it up a bit but allow 2 hours for the experience imo

    We just got of Valiant lady and had menu c.
    It wasnt good. My husband is a chef and I am a pastry chef. This is our third trip with Virgin and have always loved and talked positively about the food. This trip was a bit of a step down. Overall, the best part of the menu was the dessert, and I’m not being bias. Our server was wonderful. We did both the regular and the vegetarian menu and it was just badly put together. The flavors were off. There were weird flavor combinations that didn’t quite work. Again, it was the best thing on that menu. Overall we loved the food on virgin. Maybe this was an off night or we just got the lame duck of the three different menus.

    Wow, there are some… “interesting” opinions being voiced here. Especially the notion that “this isn’t what people want on a cruise.”

    This is exactly what I want on a cruise. I love being able to explore new food concepts and flavour combinations. Deep Blue Insider/Sea Blazer here and we don’t do Test Kitchen every voyage (because, admittedly, the menus don’t change often enough), but we will be back on board next month and can’t wait to try it again. (We’ve booked near the end of a longer voyage, so we’ll be getting B/C.)

      I agree, I think anyone who enjoys true fine dining will be very impressed with these menus. Everyone we’ve met on board over multiple itineraries all have raved about it. If tasting menus aren’t someone’s cup of tea, they aren’t going to get how amazing it is lol particularly if they felt the need to hit the galley after 6 courses lol to but it’s always interesting to see people be disparaging of an experience that is meant to be this way for those who appreciate it.

    Are these supposed to be improvements? I sailed on the Resilient Lady in March 2024. These menus are the same! This restaurant needs some shake up. Because the idea they copy Alinea, etc. is not true, in any way, shape, or form. This isn’t what people want on a cruise!

      They have removed the fifth “palate cleanser” course to speed up service, Menu C was introduced in July 2024 so you definitely didn’t have that one 😉

      It can vary. It’s best to go to the test kitchen night one and ask for the calendar

      Don’t bother with the Test Kitchen. Every single person that we dined with, went to The Galley afterwards! Because the food is not filling and many courses were just not good!

        That’s odd everyone we’ve ever spoken to dines there multiple times because it’s exceptional and one of the best fine dining experiences we’ve done on land or at sea. It sounds like fine dining isn’t for you. We’ve always left quite full and visit twice to experience both menus because its wonderful- Should you require more food than the various plentiful courses of the tasting menu you can ask for additional helpings they are very generous with additional servings.
