The full menu for Rojo by Razzle Dazzle has been revealed, showcasing bold Spanish flavors launching exclusively on Brilliant Lady.

Rojo by Razzle Dazzle will officially debut with Brilliant Lady, offering an all-new Spanish-inspired dinner experience exclusive to the ship. Swapping out the familiar vegetarian-forward Razzle Dazzle, Rojo introduces bold flavors, sharable plates, and a warm, communal setting perfect for evenings at sea.

Located on Deck 5, Rojo features a more intimate layout with smaller tables, soft lighting, and cozy touches — all inspired by the spirit of Spanish dining. The menu has been created by Justin Severino and Nate Hobart, the duo behind Morcilla in Pittsburgh.

Tapas & Small Plates

  • Gambas en Escabeche – Shrimp with fennel, red pepper, and marcona almonds
  • Chorizo Seco – Served with medjool dates, cabrales cheese, and vanilla
  • Roasted Cauliflower Catalan – With golden raisins, marcona almonds, and lemon brown butter
  • Pulpo a la Grill – Grilled octopus with brown butter potato fondue and pimentón
  • Patatas Bravas Ahumadas – Smoked fingerling potatoes with pimentón aioli
  • Jamón Croquettes – With roasted garlic and porcini aioli

  • Chuletón a la Parrilla – Grilled ribeye with chorizo piperade and charred shallots
  • Char Ártico Asado a la Plancha – Arctic char with artichokes and salsa verde
  • Arroz con Pitu de Caleya – Cider-braised chicken with short-grain rice
  • Calabaza Asada – Roasted butternut squash with romesco and almond-herb sauce
  • Costillas de la Matanza – Baby back pork ribs with harissa honey, za’atar, and labneh
  • Langosta de Maine Paella – A $70 indulgent upgrade with lobster, uni aioli, and charred lemon

Signature Cocktails

  • The Smolder – Chivas Regal, citrus, smoke, rosemary & lemon foam
  • Luna Rosa – Vodka, Lillet Blanc, tomato & laurel infusion
  • Avioneta – Mezcal, sherry, Aperol, amaro, lemon
  • El Capitán – Spanish brandy with smoked maple and bitters
  • Sangría del Sol (Low ABV) – White wine, sherry, Cointreau, and citrus
  • Besito (Non-Alcoholic) – Jasmine tea, hibiscus, lemon, peach, sparkling water

What About Brunch?

At this time, the brunch menu has not been revealed, but changes are expected. Virgin Voyages has indicated that Rojo will offer a daytime experience similar in style to the original Razzle Dazzle, with Spanish-inspired twists on brunch classics likely to appear.

    I forgot, we are living in a world where you can’t have an opinion without someone having a go at you. Silly me.

    Disappointed. Way too much meat with hardly any choice of fish/veggie. Was so excited to do a VV but now the food choices are starting to put me off.

      You haven’t even done one and you’re disappointed by one restaurant menu which is literally on one of four ships?

      A third of the menu here is fish/ vegetables. I see arctic char, butternut squash, cauliflower, potatoes, octopus, shrimp lobster and more. Live a little and wait to board the ship to see if your mind finds some great options to try. VV has so much to offer. And if you don’t like the main 5 restaurants there are 11 more dining options to chose from with all the earthy crunchy vegan options you’ll find drool worthy. I am a huge veggie foodie and found no shortage of meat free options at every course.
